Four dads, who met at their children’s school, are partnering to open a new brewpub in Eagan this June.
Union 32 Craft House is taking over the former BlueStone Steak & Seafood restaurant building, located at Highway 55 and Dodd Road. “Union 32 is a play off of Minnesota being the 32rd state to join the Union,” says co-founder Dan Redpath, and the goal is to celebrate the state’s craft beverage producers by offering dozens of Minnesota-made beers, ciders, wines, and spirits.
Redpath, a long-time craft beer fan and a homebrewer, and his business partners finalized the lease of the 7,700-square-foot building in January of 2017 and have since begun construction. The space will be divided between the 145-seat bar, dining room, and event space; a kitchen and ordering window styled as an indoor food truck; and a five-barrel brewing system, with one 10-barrel fermenter and one 10-barrel brite tank.
While the brewhouse won’t be up and running when Union 32 Craft House opens in June, they are working with Excelsior Brewing to brew two of the recipes at Excelsior’s production brewery. Once operational, Union 32’s brewery will be run by their head brewer, Rich Hess.
In addition to four to six Union 32 brands on tap, the brewpub will serve other local beers on its 32-tap self-pour beer wall where customers can pay by the ounce. Redpath hopes the system will not only set them apart from their competition, but will encourage visitors to try all the different styles and flavors that Minnesota’s brewing scene has to offer.
