Mat Waddell and Jason Sandquist of Wild Mind Artisan Ales knew that it’d be a while before the beer aging in their “Barrel Room” would be ready for release, but after a six-month aging period, they are ready to release their first wild ale in bottles.
Golden Ho/rye/zon is an American wild ale made with rye and fermented with Wild Mind’s blend of native yeast and microbes in red wine barrels from Sonoma County, California. The brewery says the resulting beer, blended from the wine barrels and from the brewery’s foudres, is “a tart rye saison with notes of apricot, peach, and funk.”
After bottle conditioning since early March, 300 bottles are set to go on sale at the taproom on March 28 starting at 4pm. People will be limited to two 750-milliliter bottles at $18 a piece.
