Anyone who’s tasted Fair State Brewing Cooperative‘s sour beers has to admit they’ve shown an above-average command of those funky yeasts. Beginning this Thursday, December 17, their new Brettanomyces-aged saison looks to continue that reputation.
Saison Drei is their new pale, rustic saison. Head brewer Niko Tonks (above) says he “modeled this beer after some of the beers we enjoy drinking the most”, namely the traditional farmhouse ales of Wallonia. Tonks let the beer ferment without temperature control, like a pre-modern farmhouse ale would have done, then added a Belgian Brett strain to give it that funk. They believe it has potential to age well at cellar temperature.
The special 750ml bottles will be available for $11 at the Fair State brewery, starting at 4pm on Thursday.
