The beauty of a combo order is not having to compromise. There’s a lot to be said for smoked wings, but ribs are the traditional barbecue go-to. What the (take-out only) menu at Smoke in the Pit in South Minneapolis suggests is: “Why not try both?” The entree features three smoked or fried wings (we tried smoked), three ribs, a generous helping of barbecue sauce, fries, a slice of white bread, and either coleslaw or baked beans (we got slaw.)
The wings are good, with a tender, gently smokey interior and a chewy, crispy exterior that registers fully even when doused in the sweet-hot-tart barbecue sauce included with the combo.
The ribs are even better, neither tough nor too loose and gelatinous. They’re tug-off-the-bone, lightly smoked, and beautifully augmented by the kick of the sauce. (Which you should get on the side so that you can let the meat speak for itself before you dab or drown it in a brighter and showier deluge of flavor.)
In a city with a blossoming barbecue scene, the unpretentious and generous menu of Smoke in the Pit fits in beautifully as a casual take-out option for diners on the move.
